It's time to play What's In Your Pantry?

I love going to the grocery store. But I know many of you do not. And many of us are watching our wallets and don't want to spend money going out to eat multiple times a week.

Tell me if this sounds familiar:

You come home from a long day at work. You're super hungry. You need to make dinner and you don't have time to go to the store (or at least not enough time for a major trip with a long shopping list.) You look in your fridge. You've got some leftovers from last night's meal, some milk that's teetering on going back, a half an onion and a bagel. You look in your pantry. You've got a few cans of beans, (because the Realistic Nutritionist advised you to stock up), some spices, sugar and hot sauce.

What on earth can you make for dinner?

One of my special abilities is being able to throw together something edible with a limited stock of food stuffs. I would like to share this ability with you to help you put together a meal (hopefully healthy and tasty) with what you've got....or by maybe making one quick trip to the store.

If you'd like to play, send me an email titled "What's In Your Pantry", and list around 10 things you have in your pantry, fridge and/or freezer. Try to list any meats you may have, any fresh produce (even if it's only half an onion or if it's about to go bad), canned items if you have them, and a few spices/sauces/seasonings you have on hand. The more information I have, the better. So feel free to give quick descriptions of each item, amount, etc. And feel free to list as many items as you'd like, but the list does not need to be exhaustive.

I will choose one or two emails and will try to come up with a recipe for you and post it here.

Also, if you have any examples of What's In Your Pantry success stories, or relevant recipes, please share!

  1. What's in my Pantry .. I have cans of beans, some frozen broccoli, chicken, kelibasa, most spices, canned corn, green beans, and some bread and milk. The worst thing is in the kitchen ..a hungry picky husband and I need to be caustious of "sugar" so what can I whip together that Mr. Picky will eat too?

  2. Do you have rice or any sort? Instant, regular, white or brown will work.

    Do you have stock or bouillon? You should always keep some on hand, it's a great way to add flavor to a dish.

    If so, you could make this:

    Chicken and Rice with Kielbasa

    -Cut your kielbasa into small pieces or chunks.
    -Measure out the amount of stock (or water with bouillon) that you need to make the appropriate amount of rice. This can vary depending on how many people you're cooking for. I would recommend making about 1 cup - 1.5 cups for each person. Usually (unless it's instant so read the box), it's a 2 to 1 ratio of water to rice. So if you're making three cups of rice you'll need 6 cups of water.
    -Put stock in a medium pot with kielbasa and rice and cook according to directions for the rice.
    -Feel free to stir in some pepper or a touch of hot sauce.

    -While rice is cooking, remove all fat and skin from your chicken. Chop or shred into small pieces.
    -Heat 1 tablespoon or so of olive oil in a pan.
    -Add chicken to pan and saute until cooked through and browned. Do not overcook or it may dry out.

    -While rice and chicken are cooking in their respective pots, put some of your frozen broccoli (about a cup or so) into a microwave safe dish.
    -Heat in the microwave until warmed through.

    -When rice is done cooking, toss it into the pan with the chicken.
    -Add the broccoli.
    -Mix and allow to heat through.
    -Season as you like with a dash of salt, some pepper, garlic powder, a tad of paprika, Mrs. Dash or whatever you prefer/have on hand.

    -Dish it up and eat!

    You can play around with the veggies you add to it. If you have an onion, pepper or garlic, you could chop them up and saute them with the chicken.

    If you had frozen peas you could add them instead of broccoli.

    I purposefully avoided adding the beans and corn to this dish. With the rice, I would avoid any additional starches if you are watching your blood sugar levels. I would also avoid serving the dish with bread for the same reason.
